Gut Friendly Christmas Roast Parsnips

Ahead of the festive season, add a gut friendly staple to your dining experiences for mouth-watering flavour filled with rich in vitamins and antioxidants.

Roasted Parsnips with Mustard, Honey & Thyme

Serves 4

Ingredients

2 tbsp local runny honey

1 tsp English mustard

1 tsp clarified butter

Pinch of salt 

Ground black pepper

500g parsnips, peeled, quartered and tough core removed

1 bunch of fresh thyme

Method:

Preheat the oven to 180 degrees centigrade, gas mark 4. Line a baking sheet with some silicone paper.

In a large bowl, mix together the honey, mustard, butter, salt and pepper. Add the cut parsnips and turn them in the mixture.

Sprinkle the whole sprigs of thyme onto the baking sheet and then lay the parsnips on top.

Roast in the preheated oven for about 20-25 minutes, turning the parsnips after 15 minutes.

Serve the parsnips in a warmed vegetable dish on top of the thyme.
